What kind of beers do you prefer to brew and why? Do these styles differ from the kinds of beers you normally like to drink?
I like to brew beers that I like to drink! Thankfully I have a diverse love of the malted beverage so our specialty brews do not get pigeon holed too much. Predominantly, I prefer crisp and refreshing beers. I really love Saison’s and Belgian beer in general. But that doesn’t mean I shy away from beer of other national origins. A pint of real ale always excites me, when the weather is cold a silky bock hits the spot and I do love the new wave of experimental hops from the northwest. I can’t get enough of Mosaic hops, but then again who can?
Any favorite beer and food pairings? How about beer and music pairings?
I find that German Pils at Alpine Valley, on my way in to see my umpteenth Phish concert is a most suitable pairing. I also love to drink crowlers of Tangerine Dream with my Chicago homies before heading to Smart Bar to dance to Techno until dawn.
How do you decide on new beers to brew?
We throw ideas around between us, we do this a few times a year and plan out a several months of specialties at a time. Mostly its what we want to do and what excites us. It definitely a team endeavor.
What are the biggest reasons for the continual growth of craft beer?
Miller and Bud suck! People want to head over to flavor country and I can’t blame them.
